Welcome to Encore, a one of a kind, unique neighborhood restaurant. Affectionately known as the Colfax Country Club, Encore has become an instant favorite to many of its Denver locals. The restaurant opened in the Lowenstein Theater complex on East Colfax, adjacent to the Tattered Cover bookstore and inhabits the space that was formerly the box office and backstage areas of the historic theater.

Chef Paul believes that the method to create a great product is as important as the final result. The products are local, organic, humane, and environmentally conscientious. Encore's passion about the environment is incorporated into the development and operation of the restaurant being green.
