Shortino, formerly executive Chef of Steamers Restaurants and partner in the Big 4 Restaurant Group, has been given the task of marrying his unique small plate Pacific Rim dishes with Pearl's already inventive line-up of sushi rolls created by sushi chef George Morales. Shortino's small plates are priced at $10 and below making Pearl Sushi Lounge and Bomber Bar a destination for anyone wanting a memorable but affordable dining experience. A sampling of Shortino's menu items are the Hawaiian Poke Tacos - spicy marinated Big Eye Tuna with avocado, ripe mango and crushed macadamia nuts; Pearl Bottle Rockets - shrimp, scallion and cream cheese egg rolls served with a cool peach chili dipping sauce; and Ginger & Thai Chili Fried Calamari - tender calamari lightly fried and tossed with fresh ginger, garlic, cilantro and Thai chilies with a Wasabi lime mayonnaise dip.

The new Bomber Bar features mini-bombers in specially designed glassware for just $4 each. Guests can affordably enjoy a new take on the traditional Bomber and try such mini bombs as the Time Bomb - Carolina sweet tea flavored vodka and lemonade, the Fire Bomb -Patron XO Coffee infused tequila with hazelnut cream or the Smart Bomb - orange flavored vodka and orange vanilla cream. Wildly inventive martinis made from such diverse ingredients as fresh fruits, nectars, Pop Rocks and more, raise martini making to an art form.
