Restaurant Description

Jon's dream of someday owning his own restaurant became a reality with Alouette. Until recently he was the Director of Operations and Human Resources for Tavern on the Green, the famed Central Park eatery, owned by the LeRoy family who also operated the Russian Tea Room, Maxwell Plum and other iconic restaurants.

Jon holds a Master and Ph.D. from Seton Hall University and Trinity College and University respectively and has vast experience in management and operations. Being a multifaceted, dedicated, and creative individual, Jon combines his vast knowledge of the business world with the human aspect of creating a fine dining experience in a relaxed atmosphere at Alouette.

Jon's philosophy is ''treat the customer well, make them the most important part of your day and everything else will fall into place''. Jon's roots are from Spain and Italy where fine dining, good food and wine are a way of life. Jon and his wife Mayra have 5 children and 4 granddaughters.
